The Cuisine

Organic foods, (known as ‘bio’ in French) is at the heart of Les Terres des Gaïa’s atelier de cuisine. Chef Babsie Steger uses only organic foods from her garden and other organic farms in the region. All meals are gourmet and will include a variety of Babsie’s recipes with an emphasis on organic vegetarian cuisine.  A sampling of foods includes delectable aperitifs of fresh guacamole and hummus, garden fresh soups and salads, exquisite organic breads, and her personal recipe for duck breast. Desserts include Babsie’s signature Austrian confections, pastries, and chocolates. And of course, no meal in France is complete without ‘fromage’, where guests will dine on organic cheeses from Gers and the Pyrenees region. The menu will be tailored for this retreat with consideration for any dietary restrictions and is guaranteed to satisfy all palettes. For a sample of what foods will be prepared, please visit Babsie’s blog (in French).
